"Why do we love fresh coffee - but bake with flour that's been on the shelf for months?"
Marcel Koidl, Managing Director of KoMo
Good reasons, to grind fresh
If you have a flour mill at home, you can grind your flour fresh at any time. Not only does this have more nutrients than the supermarket bought â it also tastes better! So why give up freshness? If you grind at home, you can also determine for yourself how fine his flour becomes. And you can just grind just as much as you need. Unlike ground grains, the full grain does not lose nutrients and can be stored for a long time.
It doesn’t always have to be wheat! How about einkorn, emmer or spelt? And not only interesting for people with gluten intolerance: Fresh flour from legumes or from pseudo cereals such as quinoa and amaranth.
Have you ever baked bread, rolls, waffles or cakes at home with freshly ground flour? The taste difference will amaze you! Fresh tastes better! Getreide schmeckt einfach am besten, wenn man es erst kurz vor der Verarbeitung frisch mahlt.
If you grind yourself, you get the full range of nutrients on offer. Especially in the shell of cereals such as wheat or spelt, we find a lot of the nutrients â why do without them? The full grain offers plenty of vitamins, important trace elements and minerals such as iron, magnesium and calcium, as well as valuable unsaturated fatty acids and proteins. But beware: Ground cereals lose important nutrients after just a few hours, which makes wholemeal flour quickly rancid.
Grinding the full grain of a grain fresh means the maximum “yield” of nutrients. Those who buy extract flour from the supermarket, on the other hand, buy a product that is significantly less healthy. Whole meal contains about 1800 mg minerals per 100 grams of flour, a extractflour type 405 contains only 405 mg minerals per 100 grams of flour.
Fresh wholemeal flour also saturates longer and takes on an important function for regular digestion. The fibre prevents constipation and reduces the risk of diseases of the colon. Wholegrain cereals are one of the most important fibre suppliers in our domestic diet.

High-quality materials
Indestructible material, carefully coordinated, and an innovative grinding concept ensure the smooth interplay of forces. The suspension developed especially for our industrial engines ensures a pleasant smoothness. Our industrial engines do not use consumables. That’s why they are maintenance-free and environmentally friendly. They run and run and run â and for decades and calmly.
The grinding mill
The heart of each mill is the KoMo grinder. Our grinding mill is patented, because it is much more than just stones and engine. Our great advantage: A suspension between the grinding stones prevents the loud grinding noise of the stones in the position “fine” as soon as the grinding process is finished. In doing so, we protect the stones and your nerves.
All KoMo mills are equipped with a special millstone made of Corund ceramics. This composite material was realized in 1985 together with a stone manufacturer. The millstone enables an effective but gentle grinding technique for the vitamin-rich grinding material. Corund ceramic stones require a low energy insert, they are permanently rough and do not need to be sharpened. They grind coarse superfein. And they are indestructible and resilient.
Exactly set
The precisely adjustable subtlety for each grinding material is another quality feature of all KoMo mills. Simply rotate the funnel along the scale. It can hardly be done in a more user-friendly manner. The enclosures, built in solid craftsmanship from high-quality woods, have an oiled surface, so that they can be cleaned effortlessly even after years and allowed to be oiled again and again. After that, they look like new.
Timelessly beautiful: The case
Hard bowl, hard core. It also depends on the outside. As things go inside our mills, you can see this from afars: Stability and durability â this applies to state-of-the-art technology in the enclosure no less than to the shell itself. It is made of high-quality, local wood because there is nothing better.
Craftsmanship well-processed wood stands up to everything and looks good. We pre-treat it with organic vegetable oils and recommend it for regular follow-up treatment.
Easy to use
Easy to use. A mill simply has to be able to do everything. She has to grind roughly. Or very fine. And once it crunches, a testing look inside must also be allowed. All this is as simple as possible. At our mills, rotate the funnel along a scale exactly to the desired level of fineness. From “quite gross” to “quite fine.” When the stones are slightly worn out over the course of many years: Just turn the funnel a little further towards “fine.” The annoying readjustment is no longer necessary for us. In the blink of an eye, the mill is easy to open even without a tool: Move the funnel about two revolutions in the direction of “roughly” and the grinding mill is already freely accessible. In order to ensure the high quality of the mills, we manufacture the mills exclusively in Austria. They are assembled there by hand in sheltered workshops and ground before delivery. If desired, gluten-free.
Compliance with these high quality standards is the basis of our daily activities and has been a substantial component of our corporate philosophy for years. We are sure that this quality, built on the appreciative approach to people and nature, that our gratitude and our passion for full-fledged food will be felt all the way into your kitchen. A flour mill of its own is the basis for enjoyment and health!
