Recipe for wholemeal focaccia

Have you ever baked focaccia yourself? This delicious pizza-style bread is not only popular in Italy, and there's a good reason for that: it's simply incredibly delicious, especially with freshly milled flour.
Ingredients
- 300 g freshly ground wholemeal spelt flour
- 50 g freshly ground rye flour
- 2–3 dl water
- 2 tbsp olive oil
- 1 cube of yeast
- 2 tsp salt
preparation
- Knead the dough ingredients into an elastic dough.
- Leave to rise in an oiled bowl.
- Spread the dough onto an oiled baking sheet using your fingertips.
- Add the topping and bake the focaccia in a preheated oven at 200 °C for approximately 20–30 minutes.
- Topping 1: Brush the dough with olive oil, then add garlic, rosemary, pepper and salt.
- Topping 2: Brush the dough with beaten egg yolk, let it sit briefly, then add olive oil with thyme and crumbled goat cheese and continue baking.
- Topping 3: Brush the dough with egg yolk, add a little sambal oelek (pepper sauce), distribute halved cherry tomatoes and basil on top and add a little salt.
