Delicious Christmas stollen, just like Grandma used to make. Refined with spices, loved by everyone. We say: enjoy!


Ingredients

  • 850 g freshly milled wheat flour
  • 300g raisins
  • 1 tsp lemon zest
  • 100 g candied orange peel
  • 100 g candied lemon peel
  • 100 g ground almonds
  • 125 ml rum
  • 1 cube of fresh yeast (approx. 42 g)
  • 150 ml milk
  • 200 g butter
  • 2 eggs (size M)
  • 100 g sugar
  • 2 packets of vanilla sugar
  • 1 pinch of salt
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • ½ tsp nutmeg

For coating:

  • 75 g butter
  • 150 g icing sugar

preparation

  1. Mix raisins, lemon zest, candied orange peel, and candied lemon peel together with rum and ground almonds. Let it steep for about an hour (for more flavor, leave overnight).
  2. Put the flour in a bowl, make a well in the center, crumble in the yeast. Add 2 tablespoons of lukewarm milk and a little sugar, mix, and cover with flour. Let it rise, covered, for 15 minutes.
  3. Add the butter in pieces, eggs, sugar, vanilla sugar, salt, and spices. Mix everything together and knead vigorously with the dough hook for at least 5 minutes. Gradually work in the remaining milk.
  4. Fold in the fruit and rum mixture. Let the dough rest in a warm place for 30 minutes.
  5. Divide the dough and shape it into two oblong loaves. Gently flatten the tops with a rolling pin and fold them over each other like a brick. Shape and place on the baking sheet.
  6. Let rise, covered, for 30 minutes. Preheat oven to 200°C, then reduce temperature to 160°C when placing the oven in the oven. Bake for approximately 45–50 minutes. Cover with aluminum foil if necessary.
  7. Brush hot stollen with melted butter and let cool. Brush again and sprinkle thickly with powdered sugar.
  8. Enjoy!
