Wholemeal apple muffins with rolled oats

These muffins are a perfect example of how you can bake extremely delicious and fluffy things using whole wheat flour.


Ingredients:

  • 100 g fresh whole wheat flour
  • 60 g fresh rolled oats
  • 50 g sugar
  • 35 g brown sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract
  • 40 g vegetable oil (neutral taste)
  • 120 g milk 1.5%
  • 1 egg
  • 1 medium-sized apple

Preparation:

  1. Preheat oven (top/bottom heat 200 °C).
  2. Grease the muffin tin or line the tin with paper baking cups.
  3. Mix the dry ingredients well.
  4. In a second bowl, thoroughly whisk together milk, oil, vanilla extract and egg.
  5. Pour all the dry ingredients into the second bowl at once, quickly mixing everything with a whisk to form a smooth, liquid batter.
  6. Peel the apple and grate it finely.
  7. Gently fold the grated apples into the batter.
  8. Pour the batter into the paper baking cups or muffin tin and bake for about 25 minutes.
  9. Remove the muffins from the baking tray, let them cool on a wire rack – and enjoy!
