Potato dumplings or gnocchi – the basic recipe comes from Italy. If you want them to taste especially good, simply make them yourself with this recipe.


Ingredients:

  • 800 g floury potatoes
  • 130 g freshly milled coarse flour
  • 130 g semolina
  • 1 pinch of salt
  • 1 pinch of pepper
  • 1 egg

Preparation:

  1. Boil the potatoes with their skins on and peel them while still hot.
  2. Press warm potatoes through a press.
  3. Add egg, flour, semolina, salt and pepper and knead into a smooth dough.
  4. Let it rest for 1 hour at room temperature.
  5. Using 2 teaspoons, scoop out a test gnocchi and shape it.
  6. Bring salted water to a boil in a pot.
  7. Add a test gnocchi, reduce heat and let it simmer for about 10 minutes.
  8. Test the gnocchi – if the consistency is too soft, work in more semolina.
  9. Shape the dough into a 2 cm thick roll and cut off 2 cm long pieces.
  10. Cook all the gnocchi over medium heat.
  11. Fish them out and drain well.
  12. Serve with sauce or pesto.
  13. Enjoy!
