Potato dumplings or gnocchi – the basic recipe comes from Italy. If you want them to taste especially good, simply make them yourself with this recipe.
Ingredients:
- 800 g floury potatoes
- 130 g freshly milled coarse flour
- 130 g semolina
- 1 pinch of salt
- 1 pinch of pepper
- 1 egg
Preparation:
- Boil the potatoes with their skins on and peel them while still hot.
- Press warm potatoes through a press.
- Add egg, flour, semolina, salt and pepper and knead into a smooth dough.
- Let it rest for 1 hour at room temperature.
- Using 2 teaspoons, scoop out a test gnocchi and shape it.
- Bring salted water to a boil in a pot.
- Add a test gnocchi, reduce heat and let it simmer for about 10 minutes.
- Test the gnocchi – if the consistency is too soft, work in more semolina.
- Shape the dough into a 2 cm thick roll and cut off 2 cm long pieces.
- Cook all the gnocchi over medium heat.
- Fish them out and drain well.
- Serve with sauce or pesto.
