Ever heard of rice bread? No? Well, it's about time!

Ingredients:

  • 20 g psyllium husks
  • 450 ml water
  • 150 g freshly ground whole grain rice flour
  • 100 g freshly ground white rice flour
  • 50 g fresh buckwheat flour or freshly rolled oats
  • 50 g flaxseed
  • 1 tsp salt
  • 1.5 tsp baking soda

Preparation:

  1. Mix the psyllium husks with water until lump-free and let them soak for about 1 hour.
  2. Preheat the oven (top and bottom heat 175°C)
  3. Mix all ingredients in a bowl, except for the psyllium husk mixture.
  4. Only now add the psyllium husk mixture and then knead the dough well by hand for about 5 minutes. Add a little water if necessary. The dough should not be too sticky and should be easy to shape.
  5. Shape the dough and score the top.
  6. Bake the bread for 60-75 minutes and then let it cool.
  7. Enjoy!
