Baking bread can be so easy – like this Italian ciabatta. This crispy bread impresses with its incredibly delicious crust and airy dough. You can easily make this basic recipe yourself.
Ingredients:
- 400 g freshly ground Flour
- 1 tsp Sugar
- 1 tbsp Salt
- 1/4 cube fresh yeast
- 270 ml lukewarm water
- something freshly ground Flour for dough preparation
Preparation:
- Mix fresh flour with salt and sugar in a bowl.
- Crumble in the yeast, add 270 ml of lukewarm water and mix together.
- Leave the very soft dough, covered, to rest for at least 2 hours.
- Generously flour the work surface and fold the dough into a parcel with damp hands.
- Fold this piece again and let it rest, covered, for 30 minutes.
- Line a baking sheet with parchment paper and sprinkle with a little flour.
- Sprinkle the dough with fresh flour and shape it into a 30 cm long strand.
- Place the dough on the baking sheet, sprinkle with a little fresh flour, cover, and let rest for another 30 minutes. Meanwhile, preheat the oven (conventional oven: 240°C / fan oven: 220°C).
- Then bake for approximately 22 minutes and let the ciabatta cool on a wire rack.

Tip:
The dough can also be prepared with cold water and stored in the refrigerator overnight. This slows down the yeast activity, and the dough will be ready to use the next day.
