How about a delicious cookie recipe for the upcoming Christmas season? Our friend Marcus has a recipe for you and us that, of course, turns out especially well and tastes great with freshly milled flour. Happy baking!
Ingredients
- 300 g freshly ground wholemeal spelt flour
- 200 g freshly ground almonds
- 300g fresh Medjool dates
- 200 g coconut oil, room temperature
- 2 eggs
- 1 shot of water
- 2 tsp baking powder
- 1 tsp Bourbon vanilla
- 1 pinch of Himalayan salt
preparation
- Preheat oven (160°C fan-assisted).
- Chop the dates and put them in the blender with a little water.
- Blend on high until a homogeneous mass forms.
- Quickly knead the date mixture with all the other ingredients in a bowl – preferably with your hands.
- Place baking paper on a baking tray.
- Form small mounds of dough and place them on the baking sheet. If desired, decorate them with a whole almond.
- Bake for approximately 10-15 minutes.
- Enjoy!
