How about a delicious cookie recipe for the upcoming Christmas season? Our friend Marcus has a recipe for you and us that, of course, turns out especially well and tastes great with freshly milled flour. Happy baking!


Ingredients

  • 300 g freshly ground wholemeal spelt flour
  • 200 g freshly ground almonds
  • 300g fresh Medjool dates
  • 200 g coconut oil, room temperature
  • 2 eggs
  • 1 shot of water
  • 2 tsp baking powder
  • 1 tsp Bourbon vanilla
  • 1 pinch of Himalayan salt

preparation

  1. Preheat oven (160°C fan-assisted).
  2. Chop the dates and put them in the blender with a little water.
  3. Blend on high until a homogeneous mass forms.
  4. Quickly knead the date mixture with all the other ingredients in a bowl – preferably with your hands.
  5. Place baking paper on a baking tray.
  6. Form small mounds of dough and place them on the baking sheet. If desired, decorate them with a whole almond.
  7. Bake for approximately 10-15 minutes.
  8. Enjoy!
