Today we have a super simple, yet incredibly delicious recipe for vegan fruit bread. The recipe comes from our friends at myhappykitchen , whose website you should definitely check out. Ingredients:
For the fruit bread:
- 300 g freshly ground spelt
- 100g almonds
- 100g cashew nuts
- 100 g hazelnuts
- 125 g sultanas
- 5 dried apricots
- 125g dates
- 125 g dried figs
- 3 apples
- 2 cl lemon juice
- 1/8 liter orange juice
- 2 tsp gingerbread spice
- 1 tsp salt
Preparation:
- Grind the spelt into flour using a grain mill.
- Roughly chop almonds, cashew nuts and hazelnuts.
- Chop the dried fruit.
- Wash the apples and grate them coarsely.
- Place all ingredients in a large bowl and mix to form a dough.
- Preheat oven (top/bottom heat 200 °C).
- Divide the dough into thirds and shape into 3 loaves.
- Place on a baking sheet lined with parchment paper and bake for 30 minutes.
- Set the oven to convection mode and bake for another 5 minutes at 200 degrees.
