Today we have a super simple, yet incredibly delicious recipe for vegan fruit bread. The recipe comes from our friends at myhappykitchen , whose website you should definitely check out. It tastes best with freshly milled spelt flour. Have fun baking it, and many thanks to myhappykitchen for the great recipe!


Ingredients:

For the fruit bread:

  • 300 g freshly ground spelt
  • 100g almonds
  • 100g cashew nuts
  • 100 g hazelnuts
  • 125 g sultanas
  • 5 dried apricots
  • 125g dates
  • 125 g dried figs
  • 3 apples
  • 2 cl lemon juice
  • 1/8 liter orange juice
  • 2 tsp gingerbread spice
  • 1 tsp salt

Preparation:

  • Grind the spelt into flour using a grain mill.
  • Roughly chop almonds, cashew nuts and hazelnuts.
  • Chop the dried fruit.
  • Wash the apples and grate them coarsely.
  • Place all ingredients in a large bowl and mix to form a dough.
  • Preheat oven (top/bottom heat 200 °C).
  • Divide the dough into thirds and shape into 3 loaves.
  • Place on a baking sheet lined with parchment paper and bake for 30 minutes.
  • Set the oven to convection mode and bake for another 5 minutes at 200 degrees.
