Walnut bread

Walnuts give your bread a particularly delicious flavor. We also use a combination of spelt and oat flour here. It tastes especially good when freshly milled, no doubt about it. This recipe can easily be made vegan by replacing the milk with a plant-based milk alternative, such as soy milk.


Ingredients

  • 500 g freshly ground spelt flour
  • 200 g freshly ground oat flour
  • 1 pinch of salt
  • 1 cube of yeast (40 g)
  • 1 tsp sugar beet syrup
  • 150 g coarsely chopped walnuts
  • 2 tbsp walnut oil
  • 3 tablespoons lukewarm milk (or plant-based milk)
  • Flour for working and for the baking sheet

preparation

  1. Mix both types of flour with 2 teaspoons of salt.
  2. Dissolve the yeast with the syrup in 5 tablespoons of lukewarm water, then knead with flour and just under 3/8 liter of lukewarm water.
  3. Dust the dough with flour and let it rise in a warm place for 1 hour.
  4. Knead the dough vigorously on a floured surface.
  5. Mix in the nuts and oil.
  6. Cover and let stand for 1 hour.
  7. Preheat oven (top/bottom heat 200 °C).
  8. Briefly knead the dough, divide it into thirds and form three oblong loaves of bread.
  9. Place on a floured baking sheet and cut several times in a diamond pattern.
  10. Cover and let stand for 15 minutes.
  11. Brush with lukewarm milk.
  12. Bake on the middle rack for approximately 45 minutes.
