Walnut bread

Walnuts give your bread a particularly delicious flavor. We also use a combination of spelt and oat flour here. It tastes especially good when freshly milled, no doubt about it. This recipe can easily be made vegan by replacing the milk with a plant-based milk alternative, such as soy milk.
Ingredients
- 500 g freshly ground spelt flour
- 200 g freshly ground oat flour
- 1 pinch of salt
- 1 cube of yeast (40 g)
- 1 tsp sugar beet syrup
- 150 g coarsely chopped walnuts
- 2 tbsp walnut oil
- 3 tablespoons lukewarm milk (or plant-based milk)
- Flour for working and for the baking sheet
preparation
- Mix both types of flour with 2 teaspoons of salt.
- Dissolve the yeast with the syrup in 5 tablespoons of lukewarm water, then knead with flour and just under 3/8 liter of lukewarm water.
- Dust the dough with flour and let it rise in a warm place for 1 hour.
- Knead the dough vigorously on a floured surface.
- Mix in the nuts and oil.
- Cover and let stand for 1 hour.
- Preheat oven (top/bottom heat 200 °C).
- Briefly knead the dough, divide it into thirds and form three oblong loaves of bread.
- Place on a floured baking sheet and cut several times in a diamond pattern.
- Cover and let stand for 15 minutes.
- Brush with lukewarm milk.
- Bake on the middle rack for approximately 45 minutes.
