Simple loaf bread with seeds

This bread is incredibly easy to make. It comes from the highly recommended book "Organic Baking with Children" by Gudrun Ambros. Have fun baking it!
Ingredients
- 350 g freshly milled spelt flour
- 150 g freshly ground rye flour
- 1 sachet of dry yeast
- ½ tsp honey
- 500 ml lukewarm water
- 2 tsp sea salt
- 2 tablespoons apple cider vinegar
- 75 g mixed seeds (sunflower seeds, sesame seeds, flax seeds, poppy seeds, pumpkin seeds)
- ¼ tsp each of ground coriander, caraway and fennel
preparation
- Dissolve the dry yeast and honey in half of the lukewarm water.
- Let it soak for about 10 minutes.
- Grind the spelt and rye finely in the grain mill.
- Mix the flour with salt, apple cider vinegar, seeds and spices in a bowl.
- Add the yeast mixture and the remaining water, and stir everything into a thick batter.
- Do not let the dough rest, but immediately pour it into a greased and seeded loaf tin.
- Place the bread in the cold oven and bake at 200 °C (180 °C fan oven) for about 75 minutes.
- Loosen the edges of the bread from the mold with a knife and let the bread cool on a wire rack.
- Enjoy!
