How about some banana bread? Banana bread is not only delicious but also healthy – as this recipe from our friend Marcus at supergoodfood shows. Absolutely brilliant!
Ingredients:
- 2 tablespoons flaxseed
- 250 g freshly ground naked oats
- ½ packet of baking powder
- 2 tbsp chia seeds
- 3 bananas (approx. 720 g net)
- 10 pitted dates (approx. 70–80 g)
- 150–180 ml almond drink
- 3 tbsp almond butter
- 120 ml coconut oil (warm slightly for measuring)
- 100g walnuts
- 2 tbsp cranberries
Preparation:
- Crush or grind the flaxseeds.
- Mix naked oats with chia seeds, baking powder and flax seeds and set aside.
- Blend 2 1/2 bananas, 3/4 dates, almond milk, almond butter and coconut oil in a high-performance blender until smooth.
- Gradually add the dry ingredients while stirring constantly.
- Chop the remaining dates into small pieces, mash the remaining banana, roughly chop the walnuts and mix them with the cranberries into the mixture.
- Preheat oven (top/bottom heat 175 °C, fan oven 150 °C – 160 °C).
- Place the dough into a greased pan.
- Bake for approximately 50–60 minutes.
