Gluten-free rice bread made from rice flour

Ever heard of rice bread? No? Well, it's about time!
Ingredients:
- 20 g psyllium husks
- 450 ml water
- 150 g freshly ground whole grain rice flour
- 100 g freshly ground white rice flour
- 50 g fresh buckwheat flour or freshly rolled oats
- 50 g flaxseed
- 1.5 tsp salt
- 1.5 tsp baking soda
Preparation:
- Mix the psyllium husks with the water until lump-free and let them soak for about 1 hour.
- Preheat oven to 175 °C (top/bottom heat).
- Mix all the dry ingredients in a bowl.
- Add the soaked psyllium husk mixture and knead everything well by hand for about 5 minutes. Add a little water if necessary. The dough should be malleable but not sticky.
- Shape the dough into a loaf and bake directly without any rising time.
- Bake for 60–75 minutes, then let cool completely.
