Gluten-free rice bread made from rice flour

Ever heard of rice bread? No? Well, it's about time!


Ingredients:

  • 20 g psyllium husks
  • 450 ml water
  • 150 g freshly ground whole grain rice flour
  • 100 g freshly ground white rice flour
  • 50 g fresh buckwheat flour or freshly rolled oats
  • 50 g flaxseed
  • 1.5 tsp salt
  • 1.5 tsp baking soda

Preparation:

  1. Mix the psyllium husks with the water until lump-free and let them soak for about 1 hour.
  2. Preheat oven to 175 °C (top/bottom heat).
  3. Mix all the dry ingredients in a bowl.
  4. Add the soaked psyllium husk mixture and knead everything well by hand for about 5 minutes. Add a little water if necessary. The dough should be malleable but not sticky.
  5. Shape the dough into a loaf and bake directly without any rising time.
  6. Bake for 60–75 minutes, then let cool completely.
  7. Enjoy!
