Banana Kamut Bread

Our friends at My Happy Kitchen have a really delicious bread recipe for you. This time it's a banana kamut bread. Sounds really tasty, doesn't it? And it's something completely different. This recipe tastes best, of course, with freshly milled flour and freshly rolled oats.

Ingredients:
For the bread:
- 500 g Kamut
- 80 g Jerusalem artichoke powder
- 7 g dried yeast
- 60 g rolled oats
- 2 tbsp banana flakes
- 2 tbsp flaxseed
- 2 tablespoons sunflower seeds
- 2 tsp coriander
- 1/2 tsp tonka bean
- 1 tsp salt
- 500 ml water
Preparation:
- Preheat oven to 200 °C.
- Finely grind kamut, coriander and tonka bean in a grain mill.
- Squeeze the oats in a flaker.
- Put flour, rolled oats, yeast, Jerusalem artichoke powder, banana flakes, flaxseed, sunflower seeds, salt and water into a bowl and knead into a dough.
- Shape into a loaf, dust with flour and lightly score.
- Place on a baking sheet lined with parchment paper and bake for approximately 60 minutes using top/bottom heat.
- Turn off the oven, open the door and let the bread rest for another 10 minutes.
- Enjoy!
